A decade ago, a group of us traveled to Italy researching hundreds of details for Cinghiale. For us, the lessons learned at the table in kitchens, and in cellars, are the most valuable. One of our favorite visits of all time was at the Foradori winery in Trentino.
A long time wine maker, Elisabetta Foradori, gave us a brilliant tour and explanation of her work and we had a wonderful lunch prepared by her mom including the memorable roasted rabbit and polenta dish. So a decade later, we’ll be hosting Theo Foraodri, Elisabetta’s son, at Cinghiale. And please also see the menu from our first wine event 9 years ago when Elisabetta visited us.
